5. Summary / objectives

 

FLAVO aims to develop advanced methods to alter the flavonoid content and composition of fruits and vegetables and derived foods and beverages, in order to optimise food quality and impact on human health, fully meeting the requirements of T6.5. This overall objective will be achieved through four major workpackages of inter-related activities: (1) Development of methods to define the optimal dose of flavonoids in foods for providing benefits to human health (2) Development of approaches for selection and transformation of plant raw materials to optimise the flavonoid composition and quality in foods (3) Development of tools for growing, analysing, selecting, and engineering fruits and vegetables with optimised flavonoid content (4) Establishing a framework for assessing market risk and consumer acceptability, and informing stakeholders over the entire food chain in order to minimise risks associated with novel food products Developing approaches for altering flavonoid composition and content in fruits and vegetables will: 1) Provide opportunities to develop novel plant foods with specific flavonoid compositions 2) Increase the health promoting properties of plant-based foods 3) Increase the competitiveness of the European Agri-Food sector 4) Contribute to food quality and safety
